My name is Nicole and I am a Natural Chef in the San Francisco Bay Area. I learned to cook from my Dad who was an amazing home chef. To me, home cooked food means community and is a true expression of love.
I was a chronic dieter all of my teens through adult life. You name it, I have done it. Weight Watchers, Jenny Craig, Adkins, Cabbage Soup Diet, The Zone Diet (remember that one?), Slim Fast, Whole 30, no fat, no carbs, restricted calories, I could go on. This was how I stayed "healthy" and thin. In my forties, my body said ENOUGH!
I started having health and hormone issues and the weight would not come off like it used to. I suffered from daily headaches and chronic migraines. My blood pressure was high for the first time in my life. I was diagnosed with a fatty liver. I was having hot flashes. Depression. My doctor was no help. I was about to sign up for another weight loss program since this had always been my quick fix to everything in the past. A little voice inside my head was telling me I needed to focus on getting to the root cause of what was causing my symptoms and not abuse my body by forcing it to lose weight, again.
I turned to Laura Halpin, Certified Nutrition Consultant for help. Laura taught me to come alongside my body, listen to what it needs and work with, not against it. She helped me discover a food sensitivity that was causing my migraines. Through food and lifestyle, she helped me to balance my blood sugar, totally eliminating cravings. She taught me to breathe, meditate, move my body in ways that brought me pleasure and not pain. All of my blood numbers are back on track and I feel like myself again.
This journey with Laura is what inspired me to want to become a Natural Chef and help others start cooking in their homes again. To start using food to support their bodies instead of focusing on making their bodies look the way a magazine or social media tells them it should. I believe that health comes in all shapes, sizes, and lifestyles.
